This is olive oil the way it existed before supermarkets: pressed the day it's picked, from trees you can come visit. Expect a fresh, grassy, peppery oil — the signature of a true early-harvest extra virgin.
Because we only bottle what our grove produces, the Estate Collection sells out every year. When it's gone, it's gone until next harvest.
Olives are hand-picked across August and September, then carried — not trucked — to our on-site press. From branch to press in minutes, not days. The oil settles, then goes straight into the bottle in our own facility.
